Earlier this year he won the gold medal in the ACE Southern regional competition.<\/p>\n<p>Thirty finalists competed for a chance to win the prestigious \u201cCopper Pot\u201d and a medal from the American Culinary Federation (ACF), the largest professional chefs association in North America.<\/p>\n<p>Yamashita was given 30 minutes to create and three hours to execute a three-course meal with ingredients from a mystery basket filled with a whole chicken, fava beans, artichokes, almonds and a whole Black Bass.<\/p>\n<p>\u201cWe had practiced for a couple of months because we knew there would be a mystery basket,\u201d said Yamashita.<\/p>\n<p>Yamashita said the hard work paid off. He and his two teammates competed against ten other teams to create an appetizer, entr\u00e9e, and dessert including:<br \/>\n-Sushi of Crispy Bass,\u00a0Fava Bean Salad, Sweet-Soy Tofu and Pickled Summer Vegetable.<br \/>\n-Chicken roulade with Leek-Mashed Potato, Butter\u00a0Poached Artichoke, Crispy\u00a0Chicken Skin and Jus.<br \/>\n-Chocolate Decadence and\u00a0Coffee Poached Pineapple with\u00a0Tuile Cookie, Spiced\u00a0Cr\u00e8me\u00a0Anglaise and Spiral Caramel.<\/p>\n<p>\u201cI just want to show them the\u00a0Southern chefs can cook more than biscuits and gravy,\u201d said Yamashita.<\/p>\n<p>This is Yamashita\u2019s fourth year competing in the national competition and he has won two bronze medals in the national competition.<\/p>\n<p>Five Certified Master Chefs, including Ferdinand Metz, past-president of the Culinary Institute of America (CIA), judged the competition based on cooking skill, flavor, plate presentation, use of all ingredients and food safety practices.<em><\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Chef Masa Yamashita, UTC\u2019s executive chef, earned the gold medal in the ARAMARK Culinary Excellence (ACE) national competition held in San Francisco.
